Sunny Sunday

Suddenly it's scorchingly s-u-mm-er!!! When the calendar hit 15th this month, the cool wind ceased blowing over our bedroom windows. Before the 15th, the weather thu consistently without rain was kindah not so island summer. Nights were still cold and windy. But now, it's hot hot really!
Yesterday , Sunday lunch at home was alfresco baby!!!!

Nothing fancy thu'. . but the colors of our food were so sunny, thought they ought to be consumed outside.

Would you give me a pat on the back, cos on this so lazy Sunday, I managed to cook sweet & sour fish. haha! I had to cheat a lil' thu'. I made use of a bottled chili sauce and just created some dash of miracle from there:))) But the fish was so fresh! I just had it scored from a fresh wet market that early morning. And hey, the cooking was in the middle of a loaded laundry hours. I should have had taken some photos of my laundry  mess happening at the other side.

Summer fruits - watermelons and mangoes, in abundance this season and always monopolize our table. Gosh, they come out so succulent and in their sweetest form this summer. yummiest!!!!

Nothing could wipe away my kitchen perspiration when my family says : I'm the best cook in the world, haha. I choose to believe them acctually, haha.
Happy summer everyone!!!!

Not Everyday...

Not everyday that we get the chance to spend time with our relatives especially when they are islands away. Half of our clan is mushrooming in Davao City. Actually, at the rate they are multiplying there, seems like they are now the 95% of our small clan. While us here in Luzon, seems to squeeze in numbers as most of our elders had passed away and us the 2nd adult generation have ceased on multiplying at the most after two children.Having said those_ a short 5 days visit to Davao wasn't good enough to even just meet and greet each family. Not to mention that our short stay was loaded with touristy schedz.. It has been ten years ago since we last visited Davao.

Most of them settled in Panabo, about an hour ride from Davao City. But we only managed to visit 3 of the countless ( don't know the exact nos.) families tying to our lineage. Even the kids weren't available as it was a regular school day.

cuzin Sylv & her vintage gigantic tv, don't ya think she likes things big? :)))

hold it !!! look mouths are all full !!!

Yet, three families would equal to three houses to visit and we only got a lunch break to re-bond with them. It was resolved with a get together lunch at cuzin' Sylvia's Panabo house. We actually were staying at her town house in the city.

On the table were the family's favorite :

Joey's fish kinilaw (malasigue )

Boboy's tuna in coconut cream

mutton/chevon (goat meat) stew in liver & tomato sauce (kalderetang kambing)

mutton (goat meat) kinilaw (kinilaw na kambing)

We also had lumpiang ubod (vegetable rolls) with peanut sauce. It was pretty obvious same blood runs to each of us_ we all love to eat! anything! We all enjoyed those a- bit-exotic-dishes.

look, even her desktop apple monitor is huge! told ya she likes things big :)))

I luv you Davao !!!

Stormy Pancit Palabok

At last I was able to cook pancit palabok at home. One look in my freezer and I saw squid, prawns and crabs. I opened the lower door of the fridge and found leftover porksteak, spam, egg and some chicken. The vegetable drawer was cooperative too, it offered some green leaves, carrot, and spring onion.

Wella, well, what else were missing? The noodles, tinapa (smoked fish) and coloring for the sauce!

I ran quickly to a nearby store and found everything I needed. Even the tinapa! The store was at the entrance of our village and there was a dried fish vendor infont. Lucky me! Since, this was a first time, I let an expert help me with this, I bought Mama Sita's powdered pancit palabok mix.

The noodles cooked easy. The toppings were quite tedious : I fried the leftover porksteak to dry and sliced thinly. I sauteed the prawns, squid and crab meat. I heated the spam to crunchy and chicken. Cut the veggies and sliced the eggs.

The sauce was a bit challenging: I figured, a pack of the prepared mixed sauce was not enough. I thought I wouldn't be needing any colorant for the sauce because of the Mama Sita's. Improvision was the answer. I added more shrimp-water (shrimp head & skin's juice) than told by the pack, then added more tinapa flakes, dropped a dash of food color ( found in my fridge door_Mccormic, red&yellow), thicken the sauce by cornstarch_ voila! It was perfect!

When my voracious family smelled what I was cooking, everyone found his nose in the kitchen and rushed me to serve the dish. That expalained the "rush look" of my pancit palabok.

Ps: It was a success thu'. They loved it! Worth the effort and love :)
